What exactly is it?? How do i need it in a data engineering setup?

There are quite a lot of use cases and different companies use our technology in different settings, but generally if you feel that widespread data collection soltuions such as Google Analytics do not satisfy your needs - its a signal that you need to consider something more advanced such as Snowplow pipeline.
